- 2 T. extra virgin olive oil, divided
- 4 4-oz. boneless, skinless chicken breasts
- ยฝ medium red onion, diced
- 1 c. long-grain brown rice, rinsed and drained
- 3 c. chicken broth, preferably organic
- Optional: Sea salt and black pepper, to taste
How to Make Baked Chicken and Rice Casserole
- Preheat oven to 350ยฐF and grease a 9×13-inch baking dish with 1 tablespoon olive oil. Set aside.
